5 Macro Friendly Dips

5 macro friendly dips:

 

  1. Spinach Dip (Jen’s recipe!)

-One pack of Lipton Vegetable Dip mix

-1 cup Walden Farms Mayo

-8 oz. low fat sour cream

-1 frozen package of spinach thawed/squeezed/drained

Stir together and chill for 2 hours before serving. Serves about 6.

  1. Healthy Buffalo Chicken Dip

-1/2 container whipped cream cheese & greek yogurt (Green Mountain Farms)

-1 cup plain greek yogurt

-1 cup part-skim mozzarella cheese

-1/2 cup original hot sauce

-1 Tbsp Ranch dip seasoning mix

-3 cups cooked shredded chicken

-1/2 cup light ranch dressing

Mix all together. Transfer mixture into greases dish and bake for 30 minutes or until cheese is melted. Remove and serve immediately. Serves about 12.

  1. Fresh Corn Salsa

-2 cups corn kernels, fresh or frozen

-1/2 cup purple onion, diced

-1/2 cup red pepper, diced

-1-2 jalapenos, seeded and minced

-1/2 cup cilantro, chopped

-1 tsp lime juice

-1 tsp kosher salt

Saute corn over medium-high heat until kernels begin to char. Set aside to cool.  In medium bowl combine onion, red pepper, jalapeno, cilantro, lime juice, and salt. Add corn and stir to combine. Serves about 6.

  1. Spicy Cauliflower Dip

-1 small head cauliflower, boiled

-1 cup greek yogurt

-4 oz. sharp cheddar cheese, grated

-1-2 tsp. hot sauce

-1/2 tsp. cumin

-1/2 tsp chili powder

-1/2 tsp. garlic powder

-1/2 tsp. kosher salt

-1/2 tsp. black pepper

-1/4 tsp. cayenne pepper

Boil the cauliflower for 10-12 minutes or until very tender. Drain the cauliflower and rinse with cold water. Add it to the food processor with greek yogurt and puree it.  Add the cheese, cumin, chili powder, garlic powder, cayenne, and hot sauce. Puree all that together and scoop into a baking dish (8x8) Bake on 375 degrees for 20-25 minutes.  Let it cool for a few minutes and then serve.

  1. Healthier Seven-layer dip

Layer 1

-1 (15-ounce) can black beans, rinsed and drained

-1/4 cup unsweetened coconut milk

-2 cloves of garlic

-2 limes peeled

- 1 tsp. cumin

-1 tsp. paprika

-1 jalapeno, seeded

Blend all ingredients in a food processor or blender.  Pour mixture into the bottom of a large bowl, coat the bottom.

Layer 2

-1 (15-ounce) can yellow corn, drained and rinsed

Pour the corn evenly over the first layer.

Layer 3

-1 chipotle pepper in adobo sauce

-2 limes, peeled

-1 cup shredded chicken

-1/8 tsp. sugar

Add all ingredients to the blender/food processor, and blend until smooth. Pour over corn, and use spatula or back of a spoon to spread evenly.

Layer 4

-3 medium bell peppers (1 red, orange, & yellow), diced

Scatter the peppers over the creamy chipotle layer.

Layer 5

-3 medium tomatoes, diced

-1/2 cup salsa

Pour the salsa over the peppers, then scatter the diced tomatoes on top.

Layer 6

-2 medium avocados, mashed

-1 cup shredded chicken

-1 lime, peeled

-1 clove garlic

-1/2 tsp. cumin

-1-2 Tbsp unsweetened coconut milk

Add all ingredients except coconut milk to the blender/food processor and process until smooth.  Add the coconut milk gradually.  Pour this over the tomatoes.

Layer 7

-1/2 cup green onions

Sprinkle the scallions on top.

Serves about 16. Serving size ½ cup. 116calories= Fat:5g Carb:17g Pro:5g
